The universal characteristic of these starches – carriers, compared to other encapsulating agents, is that they form very stable water-in-oil emulsions. The small particle size of the emulsion results in improved encapsulation yield/water retention during the spray-drying process.

On the other hand, low-viscosity starches allow the preparation of emulsions with larger particles. Larger particles in emulsions mean a faster drying rate and less water for evaporation.

                      “Spray drying” and micro-encapsulation

Spray drying is a process in which fats and fat-soluble substances are converted into a solid powder for easier handling and maintenance. A fine powder is formed during the water drying process. Since fat particles are sensitive to oxidation, micro-encapsulation is used to form a protective coating around them. Starches – carriers are amphiphilic polymers – they homogenize with oils or fats and form a protective coating. The viscosity obtained using starches – carriers is lower compared to other agents usually used. This allows an increase in the number of large particles in the pre-emulsion, along with increased productivity and economic efficiency.

The unique molecular structure of these starches promotes homogenization. Fat particles below 1 μm in size are easily formed, giving the dry powder the desired characteristics.

The agglomeration of these starches is specifically defined to promote a fast and easy dissolution process. Oxidative degradation of sensitive oils (polyunsaturated fatty acids) and fat-soluble vitamins causes an unpleasant odor/residual substances and loss of functionality.

To minimize the degradation of these products, starches – carriers provide them with an oxidative barrier, i.e., a coating resistant to oxidative transmission. To ensure good emulsifying functionality, there are starches – carriers with or without pH buffering systems available.
